Healthy Eggplant Lasagna Recipe


What you need before you get started!

-2 medium eggplant, cut in slices lengthwise

-2 lbs of ground meat (beef, turkey or chicken)

-Big handfuls of spinach

-1 1/2 cups cottage cheese, liquid strained

-2 eggs

-2 cups mozzarella

-Spaghetti Sauce- See below for a homemade recipe or you can use a sugar free option from the store


Homemade spaghetti sauce recipe:

  • Combine in a pan

-1 T extra virgin olive oil

-1/2 cup chopped onion

-1-2 garlic, chopped



Then sauté over medium heat until soft.

  • Next add

-2 cans (or 5-6 Roma) diced tomato, drained

-2 cans tomato sauce

-1 teaspoon dried basil

-1/2 teaspoon dried thyme

-2 Tablespoon dried parsley

-2 teaspoon dried oregano

-1 teaspoon salt

-1/2 teaspoon pepper

-1 bay leaf

Simmer for 30-45 minutes and enjoy your sauce!



While the sauce is simmering:

Turn your Oven to 400*F


Brush eggplant slices with extra virgin olive oil. Lay out on baking sheet. Bake for 10-15 minutes until they are tender but not mushy.


Cook meat & drain off all liquid.


Once your meat and sauce and done you can mix them together.

Combine the cottage cheese, and eggs into a separate bowl.

Bring it all Together:

Layer your pan in this order two times:

  • Meat and pasta sauce

  • Eggplant

  • Spinach

  • Cottage Cheese mix

  • Mozzarella


Then Bake for 30-40 minutes at 350*F and enjoy!
